Cream Pies
1 cup sugar
6 tbsp cornstarch
1/2 tsp salt
2 1/2 cups milk
3 egg yolks
3 tbsp butter
1/2 tsp vanilla
Combine sugar, cornstarch and salt.  Scald milk - bring just to boiling point.  
Add 2 1/4 cups scalded milk (set 1/4 cup aside), sugar, cornstarch and salt to 
top of double boiler, cook over boiling water.  Slightly whip 3 egg yolks, add 
remaining scalded milk, stirring constantly until thick.  When slightly cool, 
add butter and vanilla.  Pour into cooked pastry shell.
Variations to add:
  1)  3/4 cup chopped or sliced dates
  2)  1 pint prepared strawberries
  3)  3 large bananas, sliced
  4)  1 cup coconut
  5)  2 oz baking chocolate, melted.  Add to cream filling while still 
hot.
