Raviolis

Filling:
1 lb ground beef
1/2 lb pork sausage
1 bunch spinach or chard
1 cup chopped onion
2 or 3 cloves garlic
1 tbsp parsley
2 eggs
1/2 tsp oregano
1/2 tsp thyme
1/3 tsp pepper
3-4 tbsp grated Parmesan cheese
1 tsp chicken base

Dough:

4 cups flour
1 egg
1 cup warm water
1 tsp salt
1 tbsp oil (rub into dough)

Mix ingredients for dough. Knead well and roll out into 2 rectangles. Simmer onions in butter or oil. Add garlic and parsley. Break up meat until fine and cook in a separate pan. Drain off oil. Add meat to first mixture. Chop spinach fine and add to meat mixture. Simmer until spinach is done. Remove from stove and add eggs, oregano, thyme, pepper, cheese and chicken base. Mix well. Spoon small mounds of filling in lines over one piece of dough. Brush around the edges with water. Cover with 2nd piece of dough and cut into squares. Leave to dry for 30 minutes. Raviolis can be frozen to eat later. When ready, cook in hot boiling water for approx. 5-7 minutes.
